If we got your attention, you’ll definitely want to try our recipe for Chocolate Peanut Butter Chickpea Blondies. We pair your tempting twosome with oh-so-versatile chickpeas (aka Garbanzo Beans) for a decadent dessert that’s packed with some surprising nutritional benefits. The best part is they are easy to make and delicious.

Ingredients:

  • 1 can (14 ½ oz.) chickpeas, drained
  • ½ cup peanut butter
  • ½ cup maple syrup
  • 1½ teaspoon vanilla
  • 1½ teaspoon baking powder
  • ¾ cup chocolate chips
  • ⅓ cup walnuts
  • ½ teaspoon coarse sea salt

Directions:

Combine all ingredients except chocolate chips, walnuts and salt into food processor or blender

Process for 3 – 5 minutes until smooth

Pulse or stir in chocolate chips

Pour into 9” x 9” greased and floured baking dish

Top with nuts

Sprinkle with sea salt

Bake at 375 degrees for 50 minutes

Let cool and enjoy
