Simple Roasted Strawberry Mousse
Strawberries are a staple of summer, but thanks to a long growing season (January to November), we can enjoy them nearly all year long. If you’re like us, you’ve been stocking up on these crimson berries any chance you get! And while strawberries are definitely good enough to eat all alone, we just had to share our recipe for simple roasted strawberry mousse. It’s so easy and made with ingredients you may already have in your pantry, including incredible aquafaba. Roasting strawberries results in an intensely sweet and delicious flavor that’s hard to beat.
Ingredients
For the strawberries:
- 3 cups strawberries, stems removed
- 2 tablespoons brown sugar
- 2 tablespoons white sugar
- 2 teaspoons vanilla extract
For the aquafaba:
- ½ cup aquafaba (refrigerated overnight)
- ¼ cup sugar
- ¼ teaspoon cream of tartar (or 4 drops of lemon juice)
Directions:
- Mix sugars and vanilla together and toss in a bowl with strawberries. Pour onto a parchment-lined baking sheet and spread evenly. Bake at 350 degrees for 30 minutes, stirring occasionally to prevent burning.
- Transfer cooked strawberries and juices to blender and blend until smooth. Set aside.
- Combine aquafaba with cream of tartar (or lemon juice) and whip to soft peaks. Add ¼ cup sugar and whip to stiff peaks.
- Carefully fold strawberry mixture into aquafaba mixture.
- To preserve fluffiness, don’t overmix.
- Divide mixture into serving dishes and refrigerate 4 hours or overnight.
- Top with a dollop of whipped cream before serving.
