Summertime Mocktails: Lavender Coconut Lemonade

Lavender is this season’s “it” shade, but we’re taking it from the runway to the pool deck with a tropical twist on one of summer’s most-beloved beverages. Not only is this a treat for your taste buds, but lavender is also known for its bevy of health benefits including stress relief and inflammation reduction. We turn it into a simple syrup that is seriously simple to make.

Directions:

Start with the lavender simple syrup.

Ingredients:

  • 1 ½ cups sugar
  • 1 ½ cups water
  • 3 tablespoons of dried lavender

Mix all ingredients together, bring to a boil.

Low boil for 5 minutes and remove from heat.

Let the syrup cool and thicken (about 30 minutes).

Strain through a sieve and let cool.

Then make the lemonade.

Ingredients:

  • 1 ½ cups fresh-squeezed lemon juice (about 8 lemons)
  • 1 ½ cups sugar
  • 8 cups coconut water
  • 4 cups water

Add about half of the lavender simple syrup (more or less to taste) to your lemonade.

Mix all the ingredients together.

Pour into glasses, add ice and garnish with lemon slices and fresh lavender.

Enjoy!
