The Lemony Chicken Soup You Can’t Live Without

Brimming with protein and a burst of citrus, this recipe comes together quickly with staples you probably already have in your pantry.
Ingredients
- 2 quarts low sodium chicken broth
- 12 oz. cooked, chopped chicken
- 2 large eggs
- 6 tablespoons fresh lemon juice
- ⅔ cup uncooked white rice
- Pepper and fresh parsley for garnish (optional)
Directions:
Bring chicken broth to simmer
Whisk eggs and lemon juice
Add 1 cup of hot broth to egg/lemon mixture very slowly to prevent lumping – set aside
Reduce heat to medium and add rice
Cook 5-10 minutes
Add Chicken
Cook until rice is tender
Slowly whisk in egg/lemon/broth mixture – too fast may create scrambled eggs!
Cook 5 more minutes. Mixture will thicken as it sits.
Ladle into bowl
Garnish with pepper and fresh parsley
